What does provably fair mean? +
Provably fair means the site commits to a hashed server seed before you bet, combines it with a client seed you can change and a nonce that counts your bets, and derives each roll with HMAC-SHA256. After the server seed is revealed, you can recompute every roll yourself and confirm nothing was manipulated. It replaces "trust us" with math you can check.
